  • 2 large eggs
  • 1/2 cup whole milk
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tbsp heavy cream
  • Black food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In another bowl, combine sugar, eggs, milk, vegetable oil, and vanilla extract; mix until smooth.
  4. Gradually add wet ingredients to dry mixture, stirring gently until just combined.
  5. Fill lined muffin tins two-thirds full with batter and bake for about 18-20 minutes or until a toothpick comes out clean.
  6. Allow cupcakes to cool completely before frosting. Beat together butter and powdered sugar, adding heavy cream until desired consistency is reached. Mix in black food coloring if using.
  7. Frost cupcakes as desired.
