  • ½ cup unsalted butter (softened)
  • 4 cups powdered sugar (for frosting)
  • ½ cup unsalted butter (softened, for frosting)
  • Food coloring (red and green)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a medium bowl, whisk together flour, cocoa powder, baking powder, and sugar.
  3. In another bowl, beat eggs, milk, and vanilla extract; then slowly mix in softened butter.
  4. Combine wet ingredients into dry ingredients and stir until just mixed.
  5. Fill cupcake liners two-thirds full and bake for 18-20 minutes until a toothpick comes out clean.
  6. While cooling, prepare frosting by beating powdered sugar and butter until fluffy; add milk for desired consistency and mix in food coloring.
  7. Frost cooled cupcakes generously and top with candy eyeballs.
