  • 2 lbs mixed seafood (shrimp, mussels, clams, white fish)
  • 3 tbsp extra virgin olive oil
  • 4 cloves fresh garlic, minced
  • 14 oz canned diced tomatoes
  • 4 cups fish stock or broth
  • ½ cup dry white wine
  • ¼ cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add olive oil. Sauté minced garlic until fragrant (about 1 minute).
  2. Pour in white wine to deglaze the pot and add canned tomatoes with their juice. Simmer for 5 minutes.
  3. Add fish stock to the pot and bring to a gentle boil. Reduce heat to low and let it simmer.
  4. Carefully add mixed seafood to the pot and cook for another 5-7 minutes until shrimp are pink and clams/mussels open.
  5. Season with salt, pepper, and sprinkle chopped parsley before serving.
