  • 1 lb thinly sliced ribeye beef
  • 8 oz shirataki noodles, rinsed and drained
  • 8 oz firm tofu, cubed
  • 1 cup green onions, chopped into 1-inch pieces
  • 4 oz shiitake mushrooms, sliced
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp granulated sugar
  • 1/4 cup sake
  • 1 tbsp mirin (optional)
  • Water as needed

Instructions

  1. Prepare the ingredients by slicing the beef against the grain and chopping the vegetables.
  2. In a bowl, mix together soy sauce, sugar, sake, and mirin until well combined.
  3. Heat oil in a large skillet or hot pot over medium heat; sauté some green onions until fragrant.
  4. Layer the beef first in the pot followed by tofu and noodles; pour half of the prepared sauce over everything.
  5. Add enough water to cover the ingredients by about an inch; bring to a gentle simmer for about 10 minutes or until everything is tender.
  6. Serve in bowls with additional sauce if desired.
