  • 1 cup bell peppers (mixed colors), sliced

  • 3 cloves garlic, minced
  • ¼ cup low-sodium soy sauce
  • ½ cup beef broth
  • 2 tbsp cornstarch
  • 1 tsp black pepper
  • 2 tbsp oil (for cooking)

Instructions

  1. Slice the beef sirloin against the grain into thin strips. Chop the bell peppers and onion into bite-sized pieces.
  2. In a bowl, combine soy sauce, beef broth, garlic, cornstarch, and black pepper. Add beef strips and marinate for 15 to 20 minutes.
  3. Heat oil in a large skillet over medium-high heat. Sauté the marinated beef for about 3 to 4 minutes until browned but not fully cooked.
  4. Add bell peppers and onion to the skillet. Stir-fry for an additional 4 to 5 minutes until vegetables are tender-crisp.
  5. Pour any remaining marinade into the skillet and simmer for about two minutes until slightly thickened.
