  • 1/2 cup water or dashi stock
  • 2 large eggs
  • 2 cups finely chopped green cabbage
  • 1/4 cup chopped green onions
  • 4 strips bacon or pork belly (or substitute with shrimp/tofu)
  • 1/4 cup okonomiyaki sauce
  • 2 tbsp Kewpie mayonnaise

Instructions

  1. Prepare the Ingredients: Finely chop the cabbage and green onions.
  2. Make the Batter: In a bowl, mix flour and water (or dashi stock) until smooth. Add eggs and blend well. Stir in cabbage and green onions.
  3. Heat the Pan: Preheat a non-stick skillet over medium heat with a little oil until shimmering.
  4. Cook the Pancake: Pour half the batter into the skillet. Layer bacon or pork belly on top. Cook for about 5 minutes until golden brown, then flip carefully using two spatulas and cook for another 5 minutes.
  5. Serve: Transfer to a plate and drizzle with okonomiyaki sauce and Kewpie mayonnaise.
