  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • Salt and pepper to taste
  • 1 (14 oz) can crushed tomatoes
  • 1 cup low-sodium chicken broth
  • 1 tbsp honey

Instructions

  1. In a mixing bowl, combine ground meat, onion, garlic, cilantro, cumin, coriander, salt, and pepper. Mix until well blended.
  2. Form the mixture into bite-sized meatballs.
  3. Heat oil in a skillet over medium heat; sear meatballs until golden brown on all sides. Remove from skillet.
  4. In the same skillet, add crushed tomatoes and chicken broth. Stir in honey and bring to a simmer.
  5. Return meatballs to the skillet; let them simmer for about 20 minutes until cooked through.
  6. Serve warm over couscous or rice and garnish with fresh cilantro if desired.
