  • 100g sweet fried tofu (aburaage)
  • 4 cups dashi stock
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp mirin
  • 2 green onions, finely chopped

Instructions

  1. Prepare dashi stock by simmering water with kombu; add bonito flakes and strain.
  2. Cook udon noodles according to package instructions until tender.
  3. In the dashi pot, add soy sauce and mirin; simmer on low heat.
  4. In a separate pan, fry cut sweet tofu until golden brown.
  5. Combine cooked udon noodles and tofu in the dashi broth; serve hot garnished with green onions.
