Brighten your winter days with this refreshing Winter Citrus Salad, a vibrant medley of juicy oranges, tangy grapefruits, and sweet mandarins. Tossed with crisp red onions and aromatic mint, then drizzled with a light honey-olive oil dressing, this salad is not just a feast for the eyes but also a delightful blend of flavors. Ingredients

  • 2 medium navel oranges (about 300g)
  • 1 medium ruby red grapefruit (about 250g)
  • 2 medium mandarins (about 150g)
  • ½ small red onion (about 50g)
  • ¼ cup fresh mint leaves (about 10g)
  • 2 tbsp olive oil (30ml)
  • 1 tbsp honey (21g)

Instructions

  1. Peel the oranges, grapefruit, and mandarins. Remove any seeds and cut into bite-sized segments.
  2. Thinly slice the red onion into rings. If desired, soak in cold water for 10 minutes to reduce sharpness.
  3. In a large bowl, combine the citrus segments and sliced red onion. Gently toss.
  4. In a small bowl, whisk together olive oil and honey until combined. Drizzle over the salad and toss lightly to coat.
  5. Tear mint leaves into smaller pieces and sprinkle them on top of the salad before serving.
