Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with liners.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, cream softened butter until fluffy, then gradually add sugar.
  4. Mix in eggs one at a time, followed by vanilla extract and watermelon juice.
  5. Gradually combine the dry ingredients into the wet mixture until just combined.
  6. Spoon batter into liners, filling them two-thirds full. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Cool completely before frosting.
