Kiwi Pudding is a refreshing dessert that perfectly balances the tartness of fresh kiwis with a creamy texture.   • 4 ripe kiwis (about 500g), peeled and chopped
  • 2 cups whole milk
  • ½ cup granulated sugar
  • 3 tbsp cornstarch
  • 1 tsp vanilla extract

  1. Blend the peeled and chopped kiwis until smooth; reserve some chunks for garnish if desired.
  2. In a saucepan over medium heat, combine milk, sugar, cornstarch, and vanilla extract. Stir continuously for about 5-7 minutes until thickened.
  3. Remove from heat and gently fold in the kiwi puree until well combined.
  4. Pour the pudding into serving dishes and cover with plastic wrap to prevent skin formation. Refrigerate for at least 2 hours until set.
  5. Serve chilled, topped with reserved kiwi chunks or whipped cream.
