  • 2 cups ripe tomatoes, chopped
  • 1 cup cucumber, sliced (preferably Persian)
  • 1/2 medium red onion, thinly sliced
  • 1/2 green bell pepper, sliced
  • 1/2 cup Kalamata olives, pitted
  • 1 cup feta cheese, crumbled
  • 3 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • Salt to taste

Instructions

  1. Wash and prepare all vegetables: chop tomatoes into bite-sized pieces and slice cucumbers and red onion.
  2. Add sliced green bell pepper to the bowl with tomatoes and cucumbers.
  3. Toss in Kalamata olives and crumble feta cheese over the top.
  4. In a small bowl, whisk together olive oil, oregano, and salt; drizzle over the salad.
  5. Gently mix everything together using two large spoons.
  6. Serve immediately on plates or in bowls.
