Ingredients

  • 6 ripe tomatoes (about 2 lbs), chopped
  • 1 cucumber, peeled and chopped
  • 1 red bell pepper, chopped
  • 1 small red onion, chopped
  • 2 cloves garlic, minced
  • 3 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Wash and chop all vegetables into large chunks.
  2. In a blender or food processor, combine tomatoes, cucumber, bell pepper, onion, garlic, olive oil, and red wine vinegar. Blend until smooth but slightly chunky.
  3. Season with salt and pepper; blend briefly to mix.
  4. Transfer the gazpacho to an airtight container and chill in the refrigerator for at least two hours.
  5. Serve cold in bowls or cups garnished with diced vegetables if desired.
