  • 2 cups fresh fava beans (or 1 ½ cups frozen)
  • ½ medium red onion, finely chopped
  • 3 tbsp freshly squeezed lemon juice

  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Shell fresh fava beans from their pods or thaw frozen beans completely.
  2. Bring a pot of salted water to boil. Cook the fava beans for 3-5 minutes until tender but still bright green. Drain and rinse under cold water to stop cooking.
  3. Finely chop the red onion and parsley while the beans cool.
  4. In a large bowl, combine cooked fava beans, chopped onion, parsley, salt, pepper, olive oil, and lemon juice. Toss gently until well mixed.
  5. Allow the salad to sit for about 15 minutes before serving to let flavors meld.
  6. Serve chilled or at room temperature; drizzle with additional olive oil if desired.
