  • 2 medium carrots, grated (about 100g)
  • 1 red bell pepper, thinly sliced (about 150g)
  • 2 green onions, chopped
  • 3 tbsp rice vinegar
  • 2 tbsp sesame oil
  • 1 tbsp honey or maple syrup
  • Salt and pepper to taste
  • 1 tbsp toasted sesame seeds (for garnish)

Instructions

  1. Prepare your veggies: Wash all vegetables thoroughly. Peel the daikon radish and carrots if desired. Slice the daikon, cucumber, and red bell pepper into thin strips or matchsticks.
  2. Mix it up: In a large bowl, combine the sliced daikon, cucumber, carrots, red bell pepper, and green onions. Toss gently.
