  • 6 cups mixed apples (Granny Smith and Honeycrisp)
  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 2 tsp ground cinnamon
  • 1/2 cup unsalted butter, chilled and cubed
  • 1 tbsp lemon juice
  • Pinch of salt
  • Ice water (as needed)

Instructions

  1. Preheat oven to 425°F (220°C). Peel, core, and slice apples, then toss with sugar, cinnamon, and lemon juice.
  2. In a bowl, mix flour and salt. Cut in butter until crumbly. Gradually add ice water until dough forms. Chill for at least 1 hour.
  3. Roll out half the dough into a circle and place it in a pie pan. Fill with apple mixture and dot with butter.
  4. Roll out remaining dough into strips for a lattice top or cover with another layer of dough.
  5. Brush top with egg wash (beaten egg mixed with milk) and bake for 45-50 minutes until golden brown.
  6. Let cool before serving; enjoy warm or at room temperature.
