  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 4 cups apples (Granny Smith or Honeycrisp), peeled and sliced
  • 1 tsp cinnamon
  • 1 cup rolled oats
  • ½ cup all-purpose flour
  • ½ cup brown sugar

Instructions

  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs and melted butter; press into the bottom of a springform pan. Bake for 10 minutes until golden brown.
  2. Beat cream cheese until smooth; gradually add granulated sugar. Mix in eggs one at a time and add vanilla extract.
  3. Sauté apple slices with butter, cinnamon, and sugar until tender (about 5 minutes).
  4. Layer half the cheesecake filling over the crust, followed by half the apples; repeat layers.
  5. For topping, mix oats, flour, brown sugar, cinnamon, and melted butter until crumbly. Sprinkle over cheesecake.
  6. Bake for 50-60 minutes until set but slightly jiggly in the center. Cool completely before refrigerating for at least four hours.
