  • 2 medium zucchinis (spiralized)
  • 1 lb lean ground turkey
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup fresh basil leaves (chopped)
  • 3 cloves garlic (minced)
  • 28 oz can crushed tomatoes
  • 2 tsp Italian herbs (oregano, thyme, basil)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Spiralize the zucchinis and set aside.
  3. In a bowl, combine ground turkey, garlic, Parmesan, basil, Italian herbs, salt, and pepper. Mix until just combined.
  4. Form small meatballs (about 1 inch) and place on a parchment-lined baking sheet. Bake for 20 minutes until cooked through.
  5. While meatballs bake, heat crushed tomatoes in a saucepan over medium heat; season with salt and pepper and let simmer.
  6. Once meatballs are done, add them to the sauce and simmer for an additional 5 minutes.
  7. Serve over zucchini noodles with extra sauce.
