  • 1 lb lean ground beef
  • 2 medium zucchinis, sliced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 ½ cups shredded cheddar cheese
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a 9×13 inch baking dish with nonstick cooking spray.
  2. In a large skillet over medium heat, brown the ground beef for about 6-8 minutes. Drain excess fat if necessary.
  3. Add the chopped onion and minced garlic; sauté until onions are translucent (about 3-4 minutes).
  4. Stir in the diced tomatoes and Italian seasoning; simmer for an additional minute.
  5. Mix in the sliced zucchini and cook until slightly tender (about 5 minutes).
  6. Layer half of the beef-zucchini mixture in the prepared baking dish, sprinkle with half of the cheddar cheese, then repeat layers.
  7. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
