  • ½ cup brown sugar, packed
  • ½ cup granulated sugar

  • 1 tsp vanilla extract
  • 1 cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, ground ginger, baking soda, and salt.
  3. In another bowl, cream softened butter with brown sugar and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add dry ingredients to the wet mixture until just combined.
  6. Scoop tablespoon-sized portions onto prepared baking sheets, spacing them two inches apart.
  7. Bake for 10-12 minutes until edges are golden and centers are soft. Let cool completely.
  8. Melt white chocolate chips in a microwave-safe bowl. Dip half of each cookie into melted chocolate and return to parchment paper to set.
