  • 8 oz penne or rotini pasta
  • 2 cups mixed vegetables (bell peppers, zucchini, spinach)
  • 2 cups marinara sauce
  • 1.5 cups shredded mozzarella cheese
  • 2 tbsp olive oil
  • 1 tsp dried Italian herbs (oregano, basil)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Cook pasta in salted water until al dente, drain, and set aside.
  3. Toss mixed vegetables with olive oil, salt, pepper, and herbs; roast on a baking sheet for 15 minutes until tender.
  4. Combine cooked pasta, roasted veggies, and marinara sauce in a bowl; layer half in the baking dish.
  5. Add half of the mozzarella on top, followed by the remaining pasta mixture, then finish with more cheese.
  6. Cover with foil and bake for 25 minutes; uncover and bake an additional 10-15 minutes until golden brown.
