  • 2 tbsp matcha powder
  • 1 packet (2 ¼ tsp) active dry yeast
  • 1 cup unsweetened almond milk
  • ¼ cup coconut sugar
  • ¼ cup vegan butter, melted
  • ½ cup black sesame seeds
  • 2 tsp ground cinnamon
  • 3 tbsp maple syrup for filling

Instructions

  1. In a large bowl, combine warm almond milk and active dry yeast. Let sit for 5 minutes until frothy. Mix in melted vegan butter, coconut sugar, matcha powder, and salt.
  2. Gradually add flour while stirring until dough forms. Knead on a floured surface for about 5 minutes until smooth. Place in an oiled bowl, cover with a cloth, and let rise in a warm area until doubled (about 1 hour).
  3. Punch down the dough and roll it into a rectangle (½ inch thick). In another bowl, mix black sesame seeds, cinnamon, maple syrup, and additional coconut sugar; spread over the rolled dough.
  4. Roll up tightly from one end into a log shape and cut into equal slices.
  5. Place rolls in an oiled baking dish to rise again (30 minutes). Preheat oven to 350°F (175°C) while they rise; bake for about 25-30 minutes until golden brown.
