  • 1 cup Arborio rice
  • 2 medium fresh beets
  • 4 cups low-sodium vegetable broth
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • ½ cup dry white wine
  • ½ cup goat cheese, crumbled
  • 2 tbsp extra virgin olive oil

Instructions

  1. Preheat the oven to 400°F (200°C). Wrap each beet in foil and roast on a baking sheet for about 1 hour until tender. Cool, peel, and dice.
  2. In a large saucepan, heat olive oil over medium heat. Sauté the chopped onion until translucent (about 5 minutes), then add minced garlic and cook until fragrant.
  3. Stir in Arborio rice and toast for about 2 minutes.
  4. Add white wine and stir until mostly absorbed by the rice.
  5. Gradually add warm vegetable broth one ladle at a time, stirring frequently until absorbed before adding more (approximately 20-25 minutes).
  6. Once creamy, gently fold in diced beets and crumbled goat cheese until heated through.
  7. Serve immediately, drizzled with extra olive oil or garnished with fresh herbs if desired.
