  • 2 medium sweet potatoes (about 1 lb)
  • 2 tbsp unsalted butter
  • 1/4 cup sour cream
  • 1/2 tsp cinnamon
  • 1 cup shredded sharp cheddar cheese

Instructions

  1. Preheat the oven to 400°F (200°C). Wash the sweet potatoes and poke holes in them with a fork.
  2. Bake the sweet potatoes on a parchment-lined baking sheet for 45-60 minutes until tender.
  3. Once cool, slice each potato in half lengthwise and scoop out the insides into a mixing bowl, leaving some flesh in the skins.
  4. Mix the sweet potato flesh with butter, sour cream, cinnamon, and half of the cheddar cheese until smooth.
  5. Spoon the mixture back into the skins, topping with remaining cheese and additional cinnamon if desired.
  6. Bake again for 15-20 minutes until heated through and cheese is golden.
