  1. Prepare an 8-inch square pan by lining it with parchment paper and lightly greasing it.
  2. In a large saucepan over medium heat, combine sugar and water, stirring until the sugar completely dissolves.
  3. Bring the mixture to a boil without stirring and cook until it reaches a soft ball stage (around 240°F or 115°C), about 10 minutes.
  4. Remove from heat; mix in cornstarch combined with lemon juice and rosewater; expect bubbling.
  5. Pour the mixture into the prepared pan, smoothing the top, and let it cool at room temperature until set (several hours).
  6. Once set, dust with cornstarch before cutting into squares to prevent sticking.
