Instructions

  1. Preheat oven to 250°F (120°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, whip egg whites until soft peaks form. Gradually add 1 cup sugar and continue beating until stiff peaks form and mixture is glossy.
  3. Gently fold in cornstarch and vinegar.
  4. Spoon meringue onto the baking sheet, forming an eight-inch circle with a slight dip in the center.
  5. Bake for about 1 hour until crisp outside and soft inside; turn off oven and let cool inside to prevent cracking.
  6. For raspberry sherbet, blend raspberries until smooth, strain, mix with 1/2 cup sugar and lemon juice, then freeze for about 2 hours until set.
  7. Serve slices of pavlova topped with raspberry sherbet.
