  • 2 fresh trout fillets (approximately 6 oz each)
  • 1/2 cup sliced blanched almonds
  • 4 tbsp unsalted butter
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste
  • 2 tbsp freshly squeezed lemon juice

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat dry the trout fillets with paper towels and season both sides with salt and pepper.
  3. In a skillet over medium heat, toast the sliced almonds for about 3-4 minutes until golden brown; set aside.
  4. Add half of the butter to the skillet until melted. Place trout skin-side down and cook for about 3 minutes until golden brown; gently flip and cook for another 2 minutes until fully cooked.
  5. Remove trout from the skillet and set aside. Add remaining butter and lemon juice to the pan; whisk in toasted almonds and chopped parsley.
  6. Plate each fillet drizzled with almond-butter sauce; garnish with additional parsley if desired.
