  • 1/2 cup unsalted butter (room temperature)
  • 2 tsp espresso powder
  • 1/3 cup unsweetened cocoa powder
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, followed by the vanilla extract until well combined.
  4. In another bowl, whisk together the flour, espresso powder, cocoa powder, baking soda, and salt. Gradually add this mixture to the wet ingredients until just combined; do not overmix.
  5. Drop rounded scoops of dough onto prepared baking sheets about two inches apart. Bake for 10-12 minutes until edges are set but centers remain soft.
  6. Allow cookies to cool on baking sheets for five minutes before transferring them to wire racks.
