  • 2 medium zucchinis
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh basil, chopped
  • 1 cup marinara sauce
  • 1 tablespoon olive oil
  • Salt to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Slice both ends of the zucchinis and create long strips using a vegetable peeler or mandoline, about ¼ inch thick.
  2. Lay zucchini strips on paper towels, sprinkle lightly with salt, and let sit for 15 minutes to draw out moisture.
  3. In a bowl, mix ricotta, mozzarella, Parmesan, and basil until well combined.
  4. Spread a layer of marinara sauce in a baking dish. Take one zucchini strip, place two tablespoons of cheese mixture at one end, roll tightly, and place seam side down in the dish.
  5. Once all rolls are assembled, cover with remaining marinara sauce and sprinkle extra mozzarella on top.
  6. Cover with foil and bake for 25 minutes; remove foil and bake an additional 5 minutes until bubbly.
