  • 1 red bell pepper, diced
  • 1 cucumber, thinly sliced
  • 2 carrots, shredded
  • 2 green onions, chopped
  • 3 tablespoons peanut butter
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons lime juice (freshly squeezed)
  • 1 tablespoon honey or maple syrup

Instructions

  1. Rinse quinoa under cold water. In a medium saucepan, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat to low and simmer covered for about 15 minutes until all water is absorbed.
  2. While quinoa cooks, chop the vegetables: dice the red bell pepper, slice the cucumber, shred the carrots, and chop the green onions.
  3. In a small bowl, whisk together peanut butter, soy sauce, lime juice, and honey until smooth.
  4. Once quinoa cools slightly, fluff it with a fork in a large bowl and add all chopped vegetables.
  5. Pour dressing over the salad and gently toss until well combined.
