Tangy Salmon Spring Rolls are a refreshing and vibrant dish that combines succulent salmon, crisp vegetables, and aromatic mint, all wrapped in delicate rice paper.   • 8 oz fresh salmon fillets
  • 6 rice paper wrappers
  • 1 cup cucumber, julienned
  • 1 cup carrots, julienned
  • ½ cup fresh mint leaves
  • 3 tbsp soy sauce
  • 2 tbsp lime juice
  • 1 tbsp honey

Instructions

  1. Cook the salmon by grilling or baking at 375°F (190°C) for about 15 minutes until flaky. Let cool and flake into bite-sized pieces.
  2. While the salmon cooks, julienne the cucumber and carrots.
  3. Soak each rice paper wrapper in warm water for 10-15 seconds until pliable.
  4. Place the soaked wrapper on a clean surface; add flaked salmon, cucumber, carrots, and mint leaves in the center. Fold the sides inward and roll tightly from the bottom up.
  5. In a small bowl, whisk together soy sauce, lime juice, and honey for the dipping sauce.
  6. Serve the spring rolls on a platter with the dipping sauce.
