  • 1 tbsp low-sodium soy sauce
  • 1 tsp granulated sugar
  • 1 tbsp vegetable oil (canola or sunflower)

  1. In a bowl, whisk together the eggs, mirin, soy sauce, and sugar until smooth.
  2. Heat a non-stick skillet over medium heat and add vegetable oil, swirling to coat.
  3. Pour in a thin layer of the egg mixture and cook until slightly set but still runny on top (about 1 minute).
  4. Using chopsticks or a spatula, roll one edge towards the center while tilting the pan forward.
  5. Push the rolled omelet to one side and add another thin layer of egg mixture to fill gaps; cook for another minute before rolling again.
  6. Repeat until all egg mixture is used up. Remove from heat, let cool slightly, then slice into bite-sized pieces.
