Instructions

  1. In a mixing bowl, whisk together the eggs, soy sauce, sugar, and mirin until well combined.
  2. Preheat a non-stick frying pan over medium heat and add oil to coat the bottom.
  3. Pour a quarter of the egg mixture into the pan, swirling to create an even layer. Cook until just set but slightly runny on top (about 1 minute).
  4. Carefully roll the omelet towards one side of the pan and push it back to the edge.
  5. Add another quarter of the egg mixture, lifting the rolled omelet so uncooked egg flows underneath. Repeat until all mixture is cooked.
  6. Transfer to a cutting board, slice into thick pieces, and serve warm or cold.
