  • 1 ½ cups water or dashi stock
  • 2 large eggs
  • 1 cup cooked octopus, diced
  • ½ cup green onions, chopped
  • 1 tbsp beni shoga (pickled ginger)
  • Takoyaki sauce (to taste)
  • Kewpie mayonnaise (for garnish)
  • Bonito flakes (for garnish)

Instructions

  1. In a large bowl, whisk together flour, water or dashi stock, and eggs until smooth.
  2. Preheat your takoyaki pan over medium heat and lightly grease the wells with oil.
  3. Fill each well halfway with batter.
  4. Add diced octopus, green onions, and beni shoga to each well and stir gently.
  5. Cook for about 2 minutes until bubbles form; then flip the balls using skewers to achieve an even golden brown color.
  6. Serve warm topped with takoyaki sauce, kewpie mayonnaise, and bonito flakes.
