Sweet Red Bean Mochi is a delightful Japanese dessert featuring a chewy exterior filled with sweet, rich red beans.   • 1 cup glutinous rice flour (mochiko)
  • 1/2 cup water
  • 1/4 cup granulated sugar
  • 1 cup sweet red beans (adzuki beans), cooked and mashed
  • 1/4 cup coconut milk
  • 2 tbsp sweetened condensed milk (for filling)

Instructions

  1. Prepare sweet red beans by rinsing dried ones and boiling until soft (about an hour) or draining canned beans.
  2. For the filling, mash cooked red beans with sugar in a saucepan over medium heat until smooth. Let cool.
  3. In a bowl, combine glutinous rice flour and sugar. Gradually add water while stirring until smooth.
  4. Steam the mochi mixture in a heat-proof dish lined with parchment for 20-25 minutes until sticky and translucent.
  5. Once slightly cooled, sprinkle cornstarch on your work surface. Flatten pieces of dough, place red bean filling in the center, and seal them into balls.
  6. Dust off excess cornstarch before serving. Enjoy fresh or stored in an airtight container.
