  • 1/2 cup granulated sugar (100g)
  • 1/4 cup unsalted butter, softened (56g)
  • 1/2 cup whole milk (120ml)
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 1 tsp cinnamon
  • 2 cups mini marshmallows (200g)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. Peel and chop sweet potatoes into chunks, then boil in salted water for 15-20 minutes until fork-tender. Drain well.
  3. In a mixing bowl, mash the sweet potatoes with butter until smooth. Stir in sugar, milk, eggs, vanilla extract, and cinnamon until combined.
  4. Pour the mixture into the greased baking dish and smooth the top.
  5. Generously sprinkle mini marshmallows over the casserole.
  6. Bake for 25-30 minutes until the marshmallows are golden brown and bubbly.
