  • 1 cup packed brown sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 cup whole milk (or almond/oat milk for dairy-free)
  • 2 large eggs
  • 2 cups plain cornflakes
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a baking dish.
  2. Boil sweet potato cubes in salted water until fork-tender, about 15-20 minutes. Drain and let cool slightly.
  3. In a large bowl, mash the cooked sweet potatoes until smooth. Mix in melted butter, brown sugar, milk, and eggs until well combined.
  4. In another bowl, crush cornflakes (leaving some larger pieces). Combine with melted butter and a pinch of salt.
  5. Spread the sweet potato mixture evenly in the prepared dish and top with the cornflake mixture.
