  • 1 lb boneless, skinless chicken breasts (about 3-4)
  • 1 cup red bell pepper, chopped
  • 1 cup green bell pepper, chopped
  • 1 cup pineapple chunks (fresh or canned)
  • 3 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 1/4 cup brown sugar
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • Cooking oil for sautéing

Instructions

  1. Chop chicken, bell peppers, and drain pineapple.
  2. Marinate chicken in half the soy sauce and minced garlic for 15 minutes.
  3. Heat oil in a skillet over medium-high heat and sauté marinated chicken until golden brown (6-8 minutes).
  4. In a bowl, whisk together remaining soy sauce, rice vinegar, brown sugar, and cornstarch mixture until smooth.
  5. Add bell peppers and pineapple to the skillet with cooked chicken. Pour sauce over everything and simmer until thickened (about 5 minutes).
  6. Serve over rice or noodles with extra sauce drizzled on top.
