  • 1 lb (450g) lean ground turkey
  • 1 cup dried cranberries (150g)
  • 1 medium onion, finely chopped
  • 2 stalks celery, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp dried thyme or sage

Instructions

  1. Preheat your oven to 400°F (200°C). Wash the sweet potatoes thoroughly.
  2. Poke holes in each sweet potato with a fork and roast on the oven rack for 45-60 minutes until tender.
  3. In a skillet over medium heat, heat olive oil. Add onions and celery; sauté until soft (about 5 minutes).
  4. Add ground turkey, salt, pepper, and spices; cook until browned (around 7 minutes).
  5. Stir in cranberries; cook for an additional 2 minutes.
  6. Remove sweet potatoes from the oven, slice them lengthwise to create a pocket, and stuff with the turkey mixture.
