  • 2 tbsp granulated sugar (for strawberries)
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup heavy whipping cream
  • 1 tsp vanilla extract
  • Additional sugar to taste (optional)

Instructions

  1. Prepare the strawberries by mixing the sliced strawberries with sugar in a bowl; set aside.
  2. Preheat oven to 425°F (220°C). In a large bowl, whisk together flour, baking powder, and salt. Cut in cold butter until the mixture resembles coarse crumbs.
  3. Add heavy whipping cream and vanilla extract; mix until just combined.
  4. Turn dough onto a floured surface, pat down to about an inch thick, and cut out shortcakes using a round cutter. Place on a parchment-lined baking sheet.
  5. Bake for 15-20 minutes until golden brown. Allow to cool slightly before assembling.
  6. Slice shortcakes in half horizontally; layer with macerated strawberries and whipped cream before topping with the other half.
