  • 23 pounds fresh crawfish
  • 1 pound Andouille sausage, sliced
  • 4 ears fresh corn on the cob, halved
  • 12 pounds small new potatoes
  • 6 cloves garlic, minced
  • 1 stick (1 cup) unsalted butter
  • Old Bay seasoning to taste
  • 2 lemons, cut into wedges

Instructions

  1. Rinse crawfish under cold water to remove debris. Chop sausage into bite-sized pieces and cut corn and potatoes.
  2. Fill a large pot with water, bring to a rolling boil, and add salt generously.
  3. Add new potatoes and sausage; boil for about 10 minutes until potatoes are tender.
  4. Add corn and rinsed crawfish; sprinkle Old Bay seasoning over the top and simmer for another 5 minutes until crawfish turn bright red.
  5. In a separate pan, melt butter over medium heat, then add minced garlic; sauté until fragrant (about 2 minutes).
  6. Drain the boiled mixture (reserve some liquid if desired), pour garlic butter sauce over it, garnish with lemon wedges, and serve.
