  • 4 cups fresh spinach
  • 8 oz cream cheese, softened
  • 2 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 1 package (17.3 oz) puff pastry sheets, thawed
  • 1 egg (for egg wash)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, sauté the spinach and minced garlic in a splash of olive oil until wilted (3-4 minutes).
  3. Allow the mixture to cool slightly before combining it with cream cheese and Parmesan in a bowl; mix until smooth.
  4. Roll out puff pastry on a floured surface and cut into 4-inch squares.
  5. Place 1 tablespoon of filling in the center of each square, fold diagonally to form triangles, and seal edges with a fork.
  6. Brush triangles with beaten egg and bake for 15-20 minutes or until golden brown. Serve warm.
