  • 1 lb lean ground beef
  • 1 cup diced bell peppers (red, yellow, or green)
  • 1 medium onion, diced
  • 2 tbsp taco seasoning
  • 4 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Add onions and bell peppers; sauté until softened (about 5 minutes).
  2. Increase heat to medium-high and add ground beef. Cook until browned (about 7 minutes), breaking it apart.
  3. Stir in taco seasoning and mix well. Add a splash of water if needed.
  4. On half of the tortillas, spoon the beef mixture and sprinkle cheese before folding them over.
  5. Clean the skillet, return it to medium heat, and lightly grease it. Cook each quesadilla for about 3 minutes per side until golden brown.
  6. Let them rest briefly before slicing into triangles. Serve with sour cream or guacamole.
