  • 23 lbs tri-tip beef roast
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 2 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup fresh parsley, chopped
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup red wine vinegar
  • 1/2 tsp red pepper flakes
  • Salt to taste
  • 1/4 cup olive oil

Instructions

  1. Trim excess fat from the tri-tip and rub it with olive oil, garlic powder, smoked paprika, salt, and pepper.
  2. Preheat your grill to 225°F (107°C) for indirect grilling.
  3. Place the seasoned tri-tip on the cool side of the grill and smoke for about 1.5 to 2 hours until it reaches an internal temperature of 130°F (54°C) for medium-rare.
  4. While smoking, prepare the chimichurri by mixing parsley, cilantro, red wine vinegar, red pepper flakes, salt, and olive oil in a bowl.
  5. Once the tri-tip is done smoking, sear it over direct heat for about five minutes per side.
  6. Let it rest for ten minutes before slicing against the grain and serving drizzled with chimichurri sauce.
