  • 2 tsp smoked paprika
  • 6 cups fresh spinach (about 6 oz)
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 2 tbsp butter

Instructions

  1. Preheat the oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. In a small bowl, mix smoked paprika, salt, and pepper. Rub this mixture evenly over the chicken breasts.
  3. Heat olive oil in a skillet over medium-high heat. Sear the chicken for about 5 minutes on each side until golden brown.
  4. In another saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant (about one minute). Stir in fresh spinach until wilted.
  5. Pour in heavy cream and simmer for about five minutes until slightly thickened. Season to taste.
  6. Transfer seared chicken to the baking dish and pour creamed spinach on top. Bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
