  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 2 tsp ground cumin
  • 2 tsp chili powder (adjust to taste)
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Rinse and sort the dried black beans under cold water to remove debris.
  2. In the slow cooker, combine rinsed black beans, chopped onion, minced garlic, vegetable broth, cumin, chili powder, bay leaves, salt, and pepper. Stir well.
  3. Cover and cook on low for 6 to 8 hours until beans are tender.
  4. Check for doneness; if needed, cook for an additional hour.
  5. Serve over rice or in tortillas after removing bay leaves. Garnish with cilantro or avocado if desired.
