  • 1 cup low-sodium beef broth
  • Salt and pepper to taste

Instructions

  1. Slice the Yukon Gold potatoes thinly using a sharp knife or mandoline. Chop the onion and mince the garlic.
  2. In a skillet over medium-high heat, sear the beef chuck roast on all sides until browned (about 3-4 minutes per side).
  3. Layer half of the sliced potatoes at the bottom of the slow cooker. Top with half of the onion and garlic mixture, then place the seared beef on top. Season with salt and pepper.
  4. Add another layer of potatoes, onions, and garlic.
  5. In a mixing bowl, combine heavy cream and beef broth; pour it over the layers in the slow cooker. Top generously with shredded cheese.
  6. Cover and cook on low for 6 hours or high for 3 hours. Stir gently before serving.
