  • 4 cups low-sodium chicken broth
  • 1/4 cup soy sauce
  • 2 tbsp miso paste (white or red)
  • 1 tsp grated fresh ginger
  • 2 soft-boiled eggs
  • 2 green onions, sliced
  • 2 nori sheets

Instructions

  1. In a large pot over medium heat, combine chicken broth and water. Stir in soy sauce, miso paste, and grated ginger. Simmer gently for about 10 minutes.
  2. Cook ramen noodles according to package instructions. Drain and rinse under cold water.
  3. Soft-boil the eggs by placing them in boiling water for 6 minutes before transferring them to ice-cold water. Peel gently.
  4. Divide cooked noodles into serving bowls and ladle hot broth over them.
  5. Top each bowl with soft-boiled eggs, sliced green onions, and nori sheets.
