  • 1 can (14 oz) diced tomatoes
  • 1 cup bell peppers (chopped)
  • 1 medium onion (finely chopped)
  • 3 garlic cloves (minced)

  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté chopped onions and bell peppers until softened, about 5-7 minutes.
  2. Add minced garlic, cumin, and smoked paprika; cook for another minute until fragrant.
  3. Pour in diced tomatoes with their juices and season with salt and pepper. Allow the mixture to simmer for approximately 10 minutes until slightly thickened.
  4. Create small wells in the sauce and crack an egg into each well. Cover the skillet and cook on low heat for 6-8 minutes until egg whites are set but yolks remain runny.
  5. Serve hot from the skillet, garnished with fresh herbs if desired, alongside crusty bread or pita.
