Shakshuka, or Eggs in Tomato Sauce, is a vibrant Middle Eastern dish that features perfectly poached eggs nestled in a rich, spiced tomato sauce.   • 1 medium onion, finely chopped
  • 1 red bell pepper, chopped

  • 1 (14 oz) can diced tomatoes

  • ½ tsp chili powder (adjust to taste)
  • 4 large eggs

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté onions and bell peppers until softened (about 5 minutes).
  2. Add minced garlic and cook for another minute until fragrant.
  3. Stir in diced tomatoes and spices; simmer for about 10 minutes until thickened.
  4. Create small wells in the sauce and crack an egg into each well. Cover and cook for 6-8 minutes until egg whites are set.
